Beef Stew

Ingredients:

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10.75 ounce) can condensed beef broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the beef cubes and cook until browned on all sides.
  3. Add the onion, carrots, celery, and garlic to the pot and cook until softened.
  4. Stir in the diced tomatoes, beef broth, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the beef is tender.
  6. Serve hot with your favorite sides.
